Born on Chicago’s south side during an era where Sunday dinners were plentiful and consistent. Dining room tables were full of home cooked delicacies including macaroni and cheese, collard greens with ham hocks, barbeque ribs, baked ham, pot roast, chicken and fish prepared in a variety of ways. By age 29, like many African American males, Sadeek was already challenged with issues related to high blood pressure, hypertension, and obesity.
During a regular check up, Sadeek’s doctor informed him he was generally in good health but then proceeded to casually mention a lifetime prognosis for high blood pressure medication. While the doctor failed to present an alternative to a lifetime of meds, alarm bells were going off for Sadeek. At that moment, he questioned himself, was he comfortable with the idea of taking pills for the rest of his life??? The answer was a resounding NO! This conscious realization - no one was responsible for his health and longevity but him - started Sadeek down a path that has led him to an uncompromising love of plant-based living and holistic health.
Over the past 24 years, Sadeek has shared his expertise and introduced thousands across the globe to the power of the plant-based lifestyle. His efforts have been focused on alleviating the fears and cultural stigmas associated with a meatless diet. Sadeek has studied with some of the brightest plant-based minds in the world, earning his Certification in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies@Cornell University. Strengthening his focus on plants, soil, and the environment, Sadeek also earned his Certification in Urban Agriculture from the Rid-All Green Partnership in conjunction with Growing Power.
Sadeek is co-owner and Board Chair of The Taste of Vegan, the only annual plant-based festival on Chicago’s southside, attracting over 6,000 attendees from across the midwest. He also hosted and produced “The Green Side of Things'' (2019 - 2021), a social media talk show discussing the healthy and environmentally friendly side of food, culture, business, politics, government, sports, and all facets of life that affect the African American community. He currently serves as the Chief Health Correspondent for The Black Star Project Show on WVON Radio. Sadeek’s latest work is the creation of the ground breaking seminar experience “Food-ish” The New Definition of Food & How To Create A Disease Free Life. “Food-ish is a transformative experience designed to help audiences redefine their relationship with “food” and unlock the path to a vibrant, disease-free life.
Sadeek channeled his love for the plant-based lifestyle, years of entrepreneurial experience, and his commitment to educating and empowering individuals, families, and communities by founding The Plant-Based Afrikan Center for Nutrition. The PBA Center for Nutrition focuses on educating communities about the undeniable impact of diet on overall quality of life and helping individuals mitigate the effects of diabetes, heart disease, and cancer. Through nutrition seminars, workshops, and classes, the center strives to educate and enlighten individuals about the origins of disease and the transformational power of a plant-based lifestyle. By disseminating evidence-based information, we aim to inspire individuals to make informed choices that promote longevity, vitality, and overall well-being.
Princess Ayers-Stewart is a dedicated thought leader committed to advancing equity,diversity, and inclusion. A lawyer by training, she has nearly 20 years of experience in EEOcompliance, project management, and strategic planning within legal and corporateenvironments.
Princess has held leadership roles such as Chief Diversity and Belonging Officer at the AllenInstitute, Director of Equity, Diversity, and Inclusion at REI, Chief of Workforce Diversity andInclusion at Seattle Children’s Hospital, and Director of Global Diversity at Starbucks.In 2024, Princess joined her family’s 15-year-old business, A-List Limo & Bus, as Interim Chief
Operating Officer, focusing on enhancing systems and processes to drive sustainable growth. Acertified Pilates instructor, Princess teaches at TabPilates & Bodyworks Center, and theSouthside YMCA.
Her journey into a plant-based lifestyle began in 2021 with a 30-day animal-free challenge,which transformed her health and inspired her mentorship role at the Plant-Based AfrikanCenter for Nutrition. She currently serves as the first-ever Chief Strategy Officer for the Center,where she is responsible for formalizing the company’s strategic-planning processes, measuringperformance and progress and increasing financial growth.
Princess holds a degree in Business Administration from the University of Illinois, a Juris Doctorfrom the Chicago-Kent College of Law, and a Master of Laws in Employee Benefits from theJohn Marshall Law School. Princess has served on various boards and is currently a boardmember for Six Seconds and the It Takes A Village Family of Schools. Princess currentlyresides in Chicago with her husband Barnett Joseph Stewart. They have two children, Britt andAndre; two grandchildren, Amada and Ace; and two Westies Romeo and Pearl.
Leslie D. Moore-Hicks is a dynamic healthcare professional with over 30 years ofexperience in the fields of health education, reproductive health, and clinical leadership.Currently serving as the Associate Medical Director at Planned Parenthood of Illinois,Leslie plays a pivotal role in overseeing clinical operations, ensuring quality care, anddeveloping innovative healthcare protocols. Her leadership extends to the Bridges toPrenatal Care Program, where she guides early prenatal care for patients, ensuringsmooth transitions to permanent obstetric care providers.
Leslie’s extensive career spans a variety of roles, including her tenure as the UpstateLead Clinician, where she was instrumental in advancing reproductive healthcareservices and training clinicians. Her expertise in public health, sexual health education,and prenatal care is recognized both within the healthcare community and through herparticipation in national conferences and panel discussions.
A graduate of the University of Illinois with a Master of Science in Nursing and a Masterof Science in Public Health, Leslie has authored research on adolescent healthbehaviors and computerized health interventions. She has also been a strong advocatefor the integration of technology in public health settings, showcasing her commitmentto modernizing patient care.
Leslie is not only a clinician but also a teacher, mentor, and public speaker whofrequently shares her knowledge with both professional peers and broader audiences.Her passion for healthcare equity, particularly in addressing the needs of marginalizedcommunities, has made her a respected voice in public health and women’s healthadvocacy.
Chaka Strong is a newly certified Plant-Based Afrikan Lifestyle Coach who has embraced a plant-based lifestyle since January 2021. Diagnosed with Type 1 Diabetes (T1D) in June 1986, Chaka has experienced significant changes in his health journey. Prior to adopting a fully plant-based diet, he followed a pescatarian lifestyle, during which his A1C levels decreased from an average of 12 to 8, although he continued to experience high cholesterol and fatigue.
Since transitioning to a Whole Foods Plant-Based diet, Chaka has achieved remarkable improvements in his health. Over the past two years, for the first time in his life as a T1D, his average A1C levels have remained below 6.5, with the most recent average being 6. In addition to lower cholesterol levels, Chaka attributes his enhanced well-being to healthier cooking and eating habits, crediting his plant-based journey with significantly improving his quality of life.

Hi Sadeek! Well, next month on the 16th, I will be 1 year vegan! I just left the doc, had my scans, blood work, blood pressure, etc., all is near perfect. Although the tumor in my chest is still present, it has shrunk and it is now classified as non-detectable, and the cancer in my spine has been consistently stable. I feel great and really have enjoyed my vegan journey so far. Oh, and I am at a consistent 120 pounds (almost 30 pounds lost). I hope that all is well my brother and always THANK YOU for guiding me on this amazing path! It's been one of the best decisions I have ever made EVER! #THANKYOU
